Balsamic Glaze Dressing

This dressing is so simple and quick, that it makes it easy to dress a Strawberry Arugula Salad in seconds or use as a marinade for chicken and fish.


I threw this spinach and arugula mix in a bowl and topped with fresh strawberries, walnut pieces, fresh, soft goat cheese (I like to pinch my own off a block better than crumbles) and a rotisserie chicken breast with the skin removed. All you need is an easy dressing and I prefer making my own for this salad.


You can even use this dressing for other things like drizzling over Italian skewers with cherry tomatoes, basil and mozzarella balls or topping on a bruschetta flatbread.

  1. Add the glaze to a bowl and top with salt and pepper. Add the oil and mix with a spoon or fork. I do not like to completely mix this and leave traces of glaze still visible within the oil. Some people will mix completely until the oil is brown.

  2. Top over salad or drizzle across meats.


The above is more than enough for a hefty salad, so if you need more for a family, just use a 3:1 ration of oil:glaze. For fun, trying adding minced shallots or garlic. You can also tried different fresh herbs like basil, oregano, thyme or rosemary.
