Broccoli Ham Casserole

Are you part of the keto craze, like me? This this is a delicious recipe that is simple to make and you have leftovers for tomorrow's lunch! I lost 40 pounds on keto and have managed to keep it off for over a year now, so I know it works. I should start a keto category in my recipes but I'm too lazy.
Buy these ingredients already chopped up and you will have this in the oven in less than 10 minutes! This also makes for a super quick breakfast on the weekend when you have unexpected guests!
Ingredients:
6 cups chopped broccoli pieces
2 cups diced ham (I buy already diced but you can use a leftover ham too)
1 cup grated Mozzarella (Monterrey Jack is also delicious)
1/3 cup thinly sliced green onion (optional, but good)
10 eggs, whisked with a fork
1 tsp. Italian Seasoning (you can also use all-purpose seasoning)
fresh ground black pepper, to taste
Directions:
Heat oven to 375 degrees. Spray a 9x12 casserole dish with non-stick spray.
Bring a medium-sized pot of water to a boil. When water boils, cook the broccoli just 2 minutes; then pour into a strainer placed in the sink and let it drain.
While you are waiting on the water to come to a boil, dice ham, slice green onions, and measure the Mozzarella cheese.
Layer broccoli, ham, Mozzarella, and green onions in casserole dish.
Season the beaten eggs with Italian seasoning and fresh-ground black pepper. Pour over the layers of ham, broccoli and cheese. Use a fork to just barely stir the mixture until all the ingredients have a slight egg coating.
Bake 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown.
Serve hot, with sour cream or cooked ahead, chopped bacon if desired. You can store in the refrigerator for up to a week.
