Chicken Lettuce Wraps

If you are on the healthy train, like I am, then this is a go to low carb and easy meal that is delicious and very similar to PF Chang's version of lettuce wraps. I don't use the crispy rice noodles so I keep the carbs to a minimum and I think they are just a filler anyway. This really only takes about 20 minutes to cook.

Look at how beautiful those leaf lettuce greens are! You can use Boston or Butter lettuce instead or just pull off pieces of a lettuce head. I don't really care for that option though because I find them too thin to hold all the chicken and they fall apart. You can also use Romaine if you can't find the big head of leaf lettuce.

Ingredients:
1 lb ground chicken
2 Tablespoons dried minced onions
salt & pepper, to your preference
2 garlic cloves, minced
1 inch piece of ginger, peeled and minced
2 1/2 Tablespoons soy sauce (low sodium is my preference)
1 Tablespoon rice vinegar
1 Tablespoon sesame oil
2 Tablespoons hoisin sauce
1/2 Tablespoon honey
1/8 teaspoon chili garlic sauce
3 green onions, chopped
8 oz can sliced water chestnuts, drained and chopped
10-12 large outer lettuce leaves, cleaned and patted dry
Directions:
Brown the ground chicken with the minced onions until the meat is completely cooked. No need to drain.
Add salt and pepper to your preference, the garlic and ginger, continuing to cook about 2 minutes until the garlic is putting out full aroma.
Stir in the soy sauce, rice vinegar, sesame oil, hoisin sauce, honey, chili garlic sauce and water chest nuts, cooking for about 2-3 minutes until everything is cooked together.
Add the green onions, stirring for about 1 minute.
Remove from the stove and serve immediately.
Note:
I like to make a little extra "dipping" sauce to put on my wraps. I must mix some soy sauce and a very little chili sesame oil together (this is hot so use sparingly if you don't like some heat). If you don't have chili sesame oil, add a very small amount of the chili garlic sauce.
