Chimichurri Chicken

This meal is so super easy and in the oven in less than 10 MINUTES! Using my homemade Chimichurri Sauce this is really just pulling out your protein and cooking a delicious meal for your family. Make this sauce ahead of time for even quicker turn around!


Ingredients:

  • 2-4 chicken breasts (depending on family size)

  • Homemade Chimichurri Sauce (click my link to see how easy this is to make)

  • Pinch salt & pepper

  • Pinch of chili powder

  • Olive oil


Directions:

  1. Preheat oven to 350 degrees and pull out a baking dish. I use a 9x9 pan for two chicken breasts or 9x13 pan for four pieces of chicken breasts.

  2. Add chicken to baking pan. Lightly coat the top with olive oil and sprinkle with salt, pepper and chili powder.

  3. Top each breast with homemade Chimichurri Sauce. I like to add a few extra sprinkles of crushed red pepper flakes but it's completely optional.

  4. Bake for 20 minutes and check internal temperature. Continue cooking until chicken reaches 165 degrees in the fatty part of the chicken.
