Crockpot Buffalo Chicken Chili

Such a simple and easy way to enjoy my favorite buffalo chicken! This soup can be thrown in the crockpot while you are working and it's ready when you are!! Make sure to shred up the chicken before finishing off the creaminess to serve.



Throw on some toppers to make this soup have the perfect blend! I used blue cheese, cilantro and green onions. You can also try feta, parsley and a little ranch dressing with some tortilla strips! I left the tortilla out to save on my carb counts but it fits perfectly with this chili! If you are brave, throw on some jalapenos and sour cream!

Ingredients:

  • 1 1/2 pounds boneless chicken breasts (I used 3 breasts)

  • 14.5 oz can Great Northern beans, drained (I like these over cannellini because of the amount of cook time)

  • 14.5 oz can fire roasted diced tomatoes

  • 14.5 oz can chicken broth

  • 1 cup buffalo wing sauce (I use Frank's Red Hot Buffalo)

  • 1 package Hidden Valley ranch dressing mix envelope

  • 12-14 oz frozen sweet corn (I use my own frozen summer sweet corn but you can also substitute for a can of drained sweet corn)

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1 teaspoon celery salt

  • 1/4 teaspoon salt

  • 1/8 cup chopped cilantro (leave this completely out if you don't like cilantro)

  • 8 ounce cream cheese, softened

  • Toppings


Directions:

  1. In a 5 quart crockpot, mix all the ingredients, except the cream cheese and toppings.

  2. Cook either on high for 4 hours or low for 8 hours. This is fantastic if you forgot first thing in the morning and you are working from home! Throw it together at lunch and it's still ready!

  3. Shred the chicken either with forks in the crockpot or by removing the chicken to a cutting board to shred and add it back in.

  4. Add the cream cheese and stir until it starts to melt. Let it cook for about 10-15 minutes and stir once more before serving.

  5. Top and serve!!
