Easy 3 Ingredient Peanut Butter Fudge

This recipe was shared by Laura, a dear friend and co-worker of mine 19 years ago. I still use it to this day and it gives me fond memories of how we would share recipes and food tips. This recipe is delicious and easy to make the creamiest of peanut butter fudge. One tip...make sure you let this set up long enough so you don't have to 'spoon' eat it! Laura would make some of the best things for work pitch ins and I looked up to her as a confidant and parent. Her youngest daughter was just two years older than my youngest so I would catch up on how to handle the struggles of being a new mom with her.

Ingredients:

  • 2 sticks of unsalted butter

  • 1 lb powdered sugar

  • 1 cup peanut butter


Directions:

  1. Dump all ingredients into a microwaveable bowl and cook for 3 minutes.

  2. Stir until it starts to thicken, then give it an extra stir or two.

  3. Pour into an 8x8" pan that has been sprayed with Baking Pam. I prefer the smaller pan for thicker pieces. Also you can use foil with the overhang edges on the pan for the lift and remove trick most candy makers use for fudge. See here for more details on that process.

  4. Let it set for 2 hours before cutting. I prefer to put my in the refrigerator to chill.
