Easy Keto Shepard's Pie

This recipe is a super easy and low carb alternative to get your favorite Shepard's pie in a healthy way. Substituting the potatoes with mashed cauliflower with lots of cheese helps me go back for a second helping guilt free!


Now it is so easy to find cauliflower in the frozen section either mashed or riced for a quick substitution and I would definitely recommend cooking up this frozen mashed cauliflower instead of making it from scratch. I'm all about easy and quick tricks.

Ingredients:

  • 1 tsp olive oil

  • 1/2 small white onion, diced

  • 1 lb lean ground turkey

  • 1 cup frozen diced vegetable mix

  • pinch of salt, pepper, and garlic powder

  • 1 can Campbell's Condensed Cream of Chicken Soup (you can also use Cream of Mushroom)

  • 1 tbsp Worchestershire sauce

  • 1/4 cup beef broth

  • 1 cup shredded mild cheddar cheese

  • 1 cup shredded mozzarella

  • 12 ounce frozen mashed cauliflower

Directions:

  • Pre-heat oven to 350F degrees and prepare your 9x9 baking dish by spraying with Pam.

  • In large non-stick skillet, heat the oil on medium-high heat. Add the diced onions and saute for 2-3 minutes, until they begin to soften.

  • Add the ground turkey. Brown the meat by chopping it into small pieces until cooked mostly through for about 5-6 minutes.

  • Add the diced vegetables and stir to combine. Add a dash of salt, pepper, and garlic powder, to taste.

  • Add soup, Worchestershire, and broth to turkey mixture, and bring up to a simmer. Stir well to combine, an additional 2-3 minutes.

  • Transfer the turkey and vegetable mixture into the bottom of your greased pan.

  • Meanwhile, microwave the mashed cauliflower per the package instructions. Taste, and add salt, pepper, chives (optional) and garlic powder until seasoned to your liking.

  • Top the turkey mixture with the mashed cauliflower, and smooth with a spoon.

  • Top with both kinds of shredded cheese.

  • Bake for 20-25 minutes, until the top just begins to form a golden crust. If the cheese isn't brown enough, you can broil it for about 3 minutes. Serve warm.
