Easy Honey Garlic Roasted Rainbow Carrots

You have to try these gorgeous glazed carrots! Recently we were asked to bring a dish for an Irish themed Friendsgiving. The main dish was an Irish Stew and mashed potatoes, so this side was a perfect addition to the comfort dinner.
Ingredients:
1 ½ pounds carrots
4 tablespoons butter
3 tablespoons honey
1 tablespoon minced garlic
1 tablespoons fresh thyme plus more for garnish (I also love using fresh dill or rosemary)
1/4 teaspoon kosher salt plus more to taste
black pepper to taste
Fresh parsley for garnish
Directions:
Preheat oven to 425°F. Line a baking sheet with parchment paper, set aside. Use two if you need space for your carrots, then should lay flat.
Trim tops and bottoms of carrots, I love the colors of rainbow carrots mixed with the orange. Leave a little bit of the green stem on for fun looks, but that is totally optional. Peel carrots, and cut in half lengthwise. Arrange on the baking sheets.
Melt the butter with the honey, garlic and thyme. For simplicity, I melt it in the microwave about 40 seconds but you can use a saucepan if you are motivated. When butter is melted, whisk to combine.
Pour the honey butter sauce over the carrots and season with salt and pepper. If you put the carrots flat side down that will help them with browning. Place the baking sheets in the oven on two separate racks.
Bake for 15-20 minutes, until tender and browning. Remove from the oven and give them a quick stir, then roast for an additional 5 minutes.
Remove from oven, season with more salt and pepper if desired. Drizzle honey over the carrots and sprinkle fresh parsley over the top. Serve immediately.
