When I'm looking for an easy but tasty soup, I pull this one out. Not only is it easy to throw together, it is one I go to when I want to detox my body or focus on losing some quick pounds. I can make up this soup and eat as much as I want for lunch without feeling guilty. Just substitute this soup for one of your meals for a couple days, you won't be sorry.
What makes mine different than all the other cabbage soups you find? I throw in ground turkey meat for an extra protein kick. I find it helps bring it all together nicely but you can completely leave it out if you don't want the meat.
Ingredients:
1 pound lean ground turkey
6 carrots, rough chopped
3 onions, medium chopped
1 can (32 oz) whole peeled tomatoes, with the liquid
1 medium head of cabbage, chopped
1 can (10.5 oz) condensed french onion soup
1 can (15 oz) cut green beans, drained
2 quarts tomato juice
4-5 small sweet peppers, diced (can substitute 2 green bell peppers)
6 stalks celery, chopped
1 can (14 oz) beef broth
1 teaspoon celery salt
1 teaspoon garlic powder
Directions:
Cook up the ground turkey with the garlic powder just until the pink is gone.
Add the meat to a large stock pot and add in the carrots, onions, tomatoes, cabbage, green beans, peppers and celery.
Add onion soup, tomato juice, beef broth to the vegetables.
Add water just until all the vegetables are covered.
Simmer just until the vegetables are tender. I like to leave my carrots a little firm so they don't get mushy after sitting in the refrigerator.
Store covered no more than a week in the refrigerator.
