No Bake Chocolate Eclair Cake

This dessert is easy to make a day before the event without heating up the kitchen. There is no baking this "cake" but everyone falls in love with it. Only 5 ingredients and about 15 minutes to pull it together.


In your 9x13 pan, put your graham crackers down first as a base. You can use original, honey or even chocolate (not my preference).

Mix your milk and pudding together, then fold in the Cool Whip.


Build it like a lasagna, layering graham crackers, pudding mix, and repeat one more time. Add a third layer of graham crackers. Cover the whole thing with your melted cake frosting and refrigerate, covered, overnight.


Ingredients:

  • 2 boxes (3.5 oz) instant vanilla pudding

  • 3 cups milk

  • 1 container (8 oz) Cool Whip - any kind works here

  • 1 box graham crackers

  • 1 container chocolate cake frosting (milk chocolate or fudge works too)


Directions:

  1. Mix pudding and milk until the pudding starts to thicken, about 2 minutes.

  2. Fold in thawed Cool Whip.

  3. Line 9x13 pan with a layer of graham crackers.

  4. Add half the pudding mix on top of crackers.

  5. Add another layer of graham crackers.

  6. Add the other half of pudding mix.

  7. Top with final layer of graham crackers.

  8. Put the container of frosting in the microwave and cook for about 30 seconds on high power. Remove and stir, the frosting should be runny and pourable.

  9. Pour the frosting over the graham crackers and spread with a knife to even it out and cover to the edges of the pan.

  10. Refrigerate overnight covered.
