No Crust Pizza Casserole

One of my favorite Friday meals with my kids was always pizza. Either store bought, home made or delivery, it didn't matter. I love all the sauce variations and fresh veggies with the combination of different meats. When I started keto last year, I was afraid I had to give up pizza but I found the BEST alternative that my mouth waters over when I think about making it.

This EASY version is crustless and more of a casserole type, but is loaded with all the pizza flavors and toppings so it's a delight for those of us watching carbs. My pictures simply don't do this recipe justice but one bite and you will see for yourself.

This recipe is very versatile and I would recommend that you pick all YOUR favorite toppings. You don't have to follow my recipe step by step. Heck I don't even do that each time. I make it different each time based on my mood, but I'm giving you the basic foundation that I started with to make this simple for you. The picture above is a slightly different variation, where I added mushrooms and bite sized mozzarella pearls.

Ingredients:
8 pieces of deli ham (use your favorite but I would recommend not using honey ham)
8 pieces large deli genoa salami
1/2 jar of low carb marinara (I LOVE Rao's) - I have also substituted in a full jar of Rao's pizza sauce instead
1 lb ground beef, browned
3 cups mozzarella cheese
1 cup freshly grated parmesan cheese
1 tablespoon Italian Seasoning
1/2 teaspoon oregano
1/4 teaspoon crushed red pepper flakes
Pepperoni slices (depending on your preference on the amount)
Directions:
Preheat oven to 350 degrees and prepare a 9x13 pan by using Pam cooking spray. I love using this pyrex dish because it comes with a nice fitting lid.
Brown ground beef then add marinara sauce, red pepper flakes and seasoning. Sometimes I also add in some Italian sausage, splitting the meat portions to half pound of beef and sausage. Cook on med/high for about 5 minutes.
Cover bottom of dish with 4 pieces of ham. It's okay if they overlap. Top with slices of genoa salami and pepperoni (if you want to use).
Add 1/2 of the ground beef/marinara mixture on top of the ham. Now you can add other toppings at this point. I like to add mushrooms, small diced green peppers or banana peppers for some crunch.
Next, sprinkle the pizza with half of the mozzarella and parmesan cheese.
Repeat the same steps of laying ham, salami, pepperoni, ground beef/marinara mixture, (veggies if you used any) and cheeses then top with pepperoni. I also like to garnish with chopped black olives here.
Bake in a 350-degree oven for 20 minutes.
Move pan to the top rack and broil 1-3 minutes or until cheese is lightly browned on top.
