Peanut Butter Buckeyes

Every year these perfect, little candy balls are included in my Christmas Candy list. They are simple to make and are the most delicious combination of peanut butter and chocolate.
If you have an annual candy making event or even if you just want a tasty, fall treat this is it. I have even been hired to cater weddings with these as the focal side sweet treat. Try topping these with melted peanut butter and chopped pretzels, drizzled of white chocolate or leave them just as you see here.
Ingredients:
1 18 oz. jar of peanut butter
1 stick melted Blue Bonnet margarine
1 lb. confectioners sugar
1 package milk chocolate almond bark
Directions:
Roll peanut butter mixture into balls, drop on a baking sheet covered with parchment paper. Chill about 15 minutes.
Melt chocolate almond bark in microwave in 1 minute intervals until melted.
Using a toothpick to pick up the peanut butter ball, dip in melted chocolate leaving a circle of peanut butter visible on top. Place back on parchment to dry.
Chill the buckeyes until firm, about 30 minutes. Serve at room temperature or well chilled. Refrigerate in an airtight container for up to 5 days or package in Christmas containers to give as gifts.
