Sausage Kale Crustless Quiche

If you like easy dishes, this is for you! Perfect for late nights or weekend brunches with the girls, this is ready to put in the oven in less than 15 minutes.


This dish was inspired by how much I love my Broccoli Ham Casserole, so I decided that really it just consists of a protein, a green, a cheese and eggs. Now I'm on a mission to see how many healthy combinations I can create.


For different protein options, you can try:

  • Diced Ham

  • Andouille Sausage

  • Beef tips

  • Bacon

  • Ground Chicken

  • Diced Chicken

  • Shrimp

  • Brats

I just brown up the protein before adding it to the pan (except for the already cooked diced ham). See how easy that looks in less than 10 minutes?

This dish is low carb and fits into the keto craze. I've been doing a modified version of keto off and on for about a year and have maintained my 40 pound weight loss! Wow!

If you don't love baby Kale, just swap it out for baby Spinach. Or you can try any of these other green options:

  • Spinach

  • Kale

  • Broccoli

  • Peas

  • Cabbage

  • Green Peppers

  • Asparagus Spears

  • Brussel Sprouts


The next time I make this, I plan on adding some Feta or Gruyere cheese and try other sausages. Speaking of sausage... this is made with precooked sausage to make this even quicker to bake! I love Aidell's Chicken Sausage and tonight I used Roasted Garlic and Gruyere Sausage. Really for cheese, just pick something that will be melting and gooey that you love.

Ingredients:

  • 12 oz. package pre-cooked chicken sausage (or a protein option, see my notes)

  • 2 tsp. olive oil

  • 5 oz (about 3 cups) baby kale leaves (or a green option, see my notes)

  • 4 green onions, sliced

  • 1 1/2 cups grated Mozzarella

  • 6 eggs, beaten

  • 1 tsp. Seasoning (use your favorite all purpose seasoning or try Italian)

  • fresh ground black pepper to taste

Directions:

  1. Heat oven to 375 degrees. Spray a 9″x 9″ casserole dish with non-stick spray.

  2. Cut the sausage in half lengthwise, and then into 1/2 inch slices.

  3. Heat 1 teaspoon of olive oil in a large non-stick frying pan and cook the sausage until well-browned. Add browned sausage in the bottom of the casserole dish.

  4. Put the second teaspoon of oil into the same pan and saute the baby kale just until it starts to wilt, about 2 minutes. Put the wilted kale over the sausage in the casserole dish.

  5. Sprinkle green onions and grated mozzarella over the kale.

  6. Top with seasoning and black pepper, and pour the eggs over everything. Use a fork to move the eggs so that all the ingredients are coated.

  7. Bake 30-35 minutes, depending on how browned you like it. Serve immediately.
