Simple Pumpkin Bread

I think I may be addicted to pumpkin food, even pumpkin spice coffee! I love everything pumpkin and have even dedicated a full blog post to various pumpkin recipes I have found. This is my simple pumpkin bread that I split into two loaves and added chocolate chips to the second loaf. This is the recipe my friends ask for every year when fall rolls around. It's that good.

Ingredients:
15 oz can of packed pumpkin (not pumpkin pie mix)
3 cups sugar
1 cup vegetable oil
2/3 cup water
3 1/2 cups all purpose flour
2 tsp baking soda
3 tsp pumpkin pie spice
Directions:
Preheat oven to 350 degrees. Use Baking Pam spray and grease two loaf pans.
Stir together pumpkin, sugar, water, oil and eggs.
In a separate bowl, stir together the flour, baking soda, salt and pumpkin pie spice.
Add the dry ingredients to the wet and stir until well combined.
Pour into pans and bake 60-75 minutes.
Tip:
If you like the idea of Chocolate Chip Pumpkin Bread, just fold in 1 1/2 cups chocolate chips after the dry ingredients are combined into the wet.
You can also use this recipe to make cute mini loaves for holiday gifts!
