Simple Sweet Corn Chowder

Ingredients:

  • 8 ears of fresh sweet corn, cut off the cob

  • Half of a medium Vidalia onion, diced small

  • One stick of butter

  • 32 oz heavy whipping cream

  • 1/3 cup flour

  • 32 oz chicken stock

  • salt and pepper




Directions:

  1. Cook the onion in half stick of butter until transparent.

  2. Add the flour to the butter and onions, mixing to make a roux. Cook for about 2 minutes.

  3. Add the corn and stir together, cooking for about 2 minutes.

  4. Add the chicken stock and season with salt and pepper. Cook on a low simmer for about 30 minutes, until the corn is softer.

  5. In a blender, process soup in batches until smooth; return all to the pan. Add the cream and remaining half stick of butter.

  6. Cook on low for another 20 minutes.


Eat it plain with bread or you can try topping with bacon or ham and cheddar cheese. For a spin on elote, add cotija cheese, chili pepper and diced jalapeno.
