Steel Cut Oats

If you like oatmeal and have never tried steel cut, you are in for a treat. I love that these are a little more hearty with a little firmer chew than regular oats. And there are so many ways to make them, that you can quickly have oats for breakfast any day. My favorite thing on Sundays is to make a batch of this and store in containers in the refrigerator for a quick breakfast during my crazy work week.


You can make steel cut oats at least three ways (I don't recommend microwaving for the best version but you could do it). You can cook these on the stove top in 25 minutes, cook them overnight so they are ready for the morning or make them in a crock pot! Who doesn't love the easy crock pot? Any of these ways start with the same basic recipe and it's truly just picking which method you want to go for.


Ingredients:

  • 3 cups water

  • 1 cup heavy cream

  • 1 cup steel cut oats

  • Pinch Kosher salt


*You can also use 2 cups of water and 2 cups of milk, instead of heavy cream. Or use all water or all milk. This is completely up to you. If using all milk, be careful to watch your pot and not burn it while boiling.


Directions:

Stove top - Bring your liquid to boil, add the oats with a pinch of Kosher salt and bring back up to a boil. Give it a good stir and turn down to simmer for 20 minutes. After that, check it and stir thoroughly and it's done!! Or let it keep cooking for another 5 minutes to just soften a little more (my favorite).


Overnight - On the stove, use a dutch oven and bring your liquid to a boil. Add your oats and a pinch of Kosher salt, bringing it back up to a boil. Turn off your heat, add your heavy lid and go to bed. Your oats will be creamy and ready by morning! Can it get any easier?


Crock pot - Grease it with some butter heavily first or use a cooking spray so the oats do not stick! Add your liquid, oats and a pinch of Kosher salt. When cooking in the crock pot, I like to add a cinnamon stick as well since it will be cooking over a long period of time. Cook on high 2-3 hours or on low for 4-6 hours. Check your oats and give them a stir after about the first hour. This is the best way to make a lot for ahead preparation.


After I make my oats, I like to add a little butter and brown sugar. Then I top it with all kinds of different things like strawberries, blueberries, blackberries, granola, raisins, dried cranberries, walnuts, pecans, a little maple syrup or whatever works for you!
