Stuffed Salmon

This is a low carb, quick dinner that pairs with a nice salad. I just love salmon and the freshness it brings to the table while boosting those protein counts! I'm always experimenting with different recipes and this is based off a salmon rolled package I found in the freezer section of the grocery. I knew I could do something myself with fresh ingredients and this is what I came up with!


If you substitute the frozen spinach for fresh, make sure you chop it up good and use 1 full cup.


Ingredients:

  • 2 thick salmon filets

  • 1/2 cup feta cheese crumbles

  • 1 cup ricotta cheese

  • 1/2 cup frozen chopped spinach, thawed and squeeze all liquid out

  • 1 beaten egg

  • 1 tsp Italian seasoning

  • 1/2 tsp ground pepper


Directions:

  1. Preheat oven to 350 degrees. Prepare a small 9x9 baking dish by spraying with Pam.

  2. Pat dry the salmon filets. Cut a slit a little more than 3/4 of the way down the length of the filet to make a pouch pocket.

  3. In a medium bowl, combine the feta, ricotta, spinach, egg and seasonings, mixing everything together well.

  4. Spoon the cheese mixture into each filet. Place each filet in the baking dish with the openings facing each other.

  5. Bake for 15-20 minutes. Remove and let rest for about 5 minutes before serving.
