Teriyaki Salmon with Mushrooms

I use a homemade teriyaki sauce with salmon for this quick dinner recipe. You can use this sauce for other dishes too, like chicken or pork. Try adding it to a fried rice for an extra kick of flavor. I used my favorite baked salmon recipe and experimented with the teriyaki, for a lovely asian dish with a different protein.

Look at those slightly broiled edges - those are the best parts!!

This is right before wrapping it up and popping it into the oven. You can also use any kind of mushrooms on this, so pick your favorite! I love white buttons, baby bella, shiitake, and portabella.
Ingredients:
1 large salmon fillet (really the size doesn't matter too much but I like a larger portion for leftovers)
Baby bella mushrooms, sliced
Toasted sesame seeds (optional)
To make my homemade teriyaki sauce:
3 Tbsp teriyaki sauce
3 Tbsp hoisin sauce
3 Tbsp soy sauce
1 Tbsp white vinegar
1 Tbsp sesame oil
1/3 cup packed light brown sugar
3 minced garlic cloves
2 tsp freshly grated ginger or 1/2 tsp ground ginger
Directions:
Preheat oven to 350 degrees. Prepare a baking sheet with sides by laying a large piece of foil on it.
Place the salmon on top of the foil.
Mix all the ingredients together to make the homemade teriyaki sauce. Pour mixture over salmon.
Add the slices of mushrooms across the top of the salmon.
Fold sides of foil up over the salmon (it does not matter if it doesn't cover the salmon completely).
Bake for 15-20 minutes. Switch oven to broil and cook another 5 minutes.
Sprinkle your salmon with toasted sesame seeds (or leave off) and serve.
